Our favourite butcher, Ian at Ellis Butchers in McLaren Vale, periodically makes amazing sausage he calls call “Never Ever” because it is never ever the exact same recipe twice. The reason it is so good is that it is made from different types and cuts of meat (including their best ones) that are too small for the display etc, not the usual sausage ingredients. We’re not big sausage eaters but Never Evers are always something else and an incredibly good deal from a trusted butcher.

At Inkwell, we make wine from a lot of different varieties of grapes a number of different ways in varying volumes and then hope they all fit into standard size barrels. Of course, this plan is a fool’s errand. It never works out. There is always a little of this, some of that and a small tank of something else that doesn’t necessarily fit “the plan”.

Usually, we adjust the plan, doing larger bottlings, changing blends, etc. In the 2024 release (the twisted sister of 2020 and 2021), we tried a different approach with all the little portions from vintage 2021 – we blended them all just to see what would happen.

We fell in love with the resulting wine and realised that it was like the Never Ever sausage – a happy high-quality wine never to be exactly repeated.
